One Skillet Homemade Shepherd's Pie
The classic shepherd’s pie is one of the most popular dishes on dinner tables. Growing up, we loved a hearty homemade pie stuffed with juicy minced meat, vegetables, and spices. Around the world, everyone has their recipe and twist on this classic. This skillet shepherd's pie is freezer-friendly and can be warmed up for another day.
Today I will show you my twist on this popular dish that will leave you wanting more. Let's jump right in; the full recipe is down below.
Cook and prep time: 45 min-1 hr.
Ingredients: $10-20
1 Pack of lean ground beef. Chicken or turkey
1 Large onion
1 Celery stalk
1 Medium carrot
Low Sodium Beef stock
1-2 Cloves of Garlic
Olive oil
Parsley (fresh)
Rosemary (fresh)
Thyme (fresh)
4-6 Large potatoes
1 Medium-Large sweet potato
1 Cup of spinach
Salt
Paprika
Garlic Powder
Parmesan cheese
1 Small bay leaf (optional)
Frozen peas (optional)
Salted butter
Diced tomato
When making any dish from scratch, use the freshest ingredients to enhance the flavor. For today's recipe, I used fresh parsley, rosemary, and thyme from my local grocery store; if you grow your own, even better.
Let’s start to cook
Peel, wash, cut, and cook potatoes in a pot until fork-tender.
Heat skillet and add olive oil.
Add chopped onions, fresh thyme, celery and garlic.
Sauté over medium-high heat until golden brown.
Add minced meat.
Add spices (paprika, garlic & salt). Only add salt to taste.
Once the meat is cooked, add corn, carrots, and fresh spinach (fresh or frozen peas are optional).
Once the meat and veggies are cooked, add beef broth and diced tomato.
Lower the stove to medium heat, and simmer until the sauce is thick in the pan.
Turn off the stove and set the minced meat aside.
At this time, the potatoes should be cooked.
Mash the potatoes with butter, rosemary, a pinch of salt, fresh thyme, milk, and parsley.
Blend in a generous amount of parmesan cheese.
I added one sweet potato to this recipe for extra flavor.
Once the potatoes are blended, spread over your minced meat with vegetables.
Cover thoroughly and top with a little extra cheese
Bake in the oven until golden brown at 350 degrees.
Let it cool and enjoy.
